Taco Bell has been keeping us fed this year—literally and figuratively. The chain didn’t go one month without a new menu item or market test this year, ensuring that fans were excited to hit The Bell nearly every week.Â
While Taco Bell made some quiet additions, such as the new Loaded Steak & Jalapeño Topped Fries and plenty of tests, most of its menu announcements were originally teased at Live Más Live in March. Since then, fans have been eagerly awaiting the arrival of items like the Y2K Decades Menu, Flamin’ Hot Grilled Cheese Burrito, and Baja Blast Pie, all year.
Personally, I’ve been (honestly, rather impatiently) waiting for an item that was originally market tested in March—and the best thing I ate at Live Más Live 2025.

If you haven’t been following this menu item’s journey, let me fill you in. The Steak & Poblano Rolled Quesadilla is a first for Taco Bell in two ways. It’s a new kind of quesadilla for the chain, rolling the cheesy quesadilla into a more portable, gooey burrito-style option. And, it’s Taco Bell’s first-ever time adding poblano peppers to a menu item.
The Steak & Poblano Rolled Quesadilla was initially tested in Detroit in March, and it has not changed since the market test—nor since I tried it at Live Más Live. Taco Bell’s new Rolled Quesadilla is filled with marinated, grilled steak, charred poblano peppers, Spicy Ranch, and a three-cheese blend all rolled in a warm tortilla.
“Poblanos were the perfect fit for this quesadilla, thanks to how their fire-roasted flavor pairs with steak, cheese, and Spicy Ranch. These poblanos are fire-roasted and charred over an open flame, bringing out their natural sweetness, gentle smokiness, and deep, vibrant green color that makes every bite as visually appealing as it is flavorful,” Brett Pluskalowski, Taco Bell’s senior manager of Food Innovation, told Allrecipes in an exclusive interview.
When I tried the new Steak & Poblano Rolled Quesadilla at Live Más Live, I’ll admit, I was skeptical. I couldn’t wrap my head around a “rolled quesadilla,” but after one bite, I was proven oh-so wrong.Â
“The charred poblanos offer a nice level of spice that pairs well with the steak. The creamy spicy ranch and gooey cheese make the entire dish that much more delicious—I need this everywhere immediately,” I wrote of the menu item back in March.Â
Now, the time has finally come. Taco Bell’s Steak & Poblano Rolled Quesadilla is joining menus nationwide beginning Nov. 20. Sadly, the new, first-of-its-kind rolled quesadilla will only be available for a limited time, but I have high hopes that Taco Bell will utilize this format more in the future.Â
Since the original Steak & Poblano Rolled Quesadilla test, the chain has already begun testing a Cantina Chicken Quesadilla Rollup and a Fajita Rolled Quesadilla. However, we likely won’t have updates on those menu tests for a few more months—but that’s a-OK because the Steak & Poblano Rolled Quesadilla will hold us over until then.
Now, all I need is the Quesocrisp Taco to hit menus, and my Taco Bell year will be complete!
