  • Make an extra-moist loaf. While the mashed ripe bananas give the batter plenty of moisture, one Allrecipes community member recommends covering the top with foil for the last 15 minutes in the oven to steam the loaf for an even fluffier result.
  • Add more spice. Incorporating 1/2 to 1 teaspoon of cinnamon and/or 1/2 teaspoon of nutmeg gives the loaf slightly spicy and nutty notes.
