A couple new recipes took center stage last week, including the winning recipe from our first-ever recipe contest. It’s a spicy, ranch-drizzled Tex-Mex casserole from Allrecipes’ first official Casserole Ambassador, a great-grandmother named Bette Sullivan. It wasn’t the only casserole that stole the spotlight: Several of our newest most-saved recipes use 9×13-inch baking dishes, including enchiladas and chicken cobbler.

Easy Enchilada Casserole
“We had this casserole for dinner tonight and were very pleasantly surprised! It was better than anything we’ve had at our local Mexican restaurants. In addition to the suggested garnish of sour cream and black olives, we sprinkled fresh cilantro on top. Extremely flavorful.” —Vicki

“Ever since I made this the first time, a few years ago, I crave it! The recipe has been around for years. I prefer it made with Bisquick (or another baking mix). The oldest version I have found was made with pancake mix. I live alone but, I make the full recipe and eat the leftovers until it’s all gone.” —JollyChai3806
