  1. Flavor: I focused on loaves that showcased pure banana flavor. Surprisingly, none of these recipes included cinnamon or other spices—which let the banana flavor shine even brighter.
  2. Texture: The best loaves are moist and light with an even, tender crumb. They are never dense or chewy, and absolutely never dry or crumbly. 
  3. Appearance: The best banana breads are golden and slightly domed with an even interior. These visual cornerstones are also markers of well-balanced ingredients and the use of good technique.

I am a huge believer in the power of sour cream to improve baked goods of all kinds. In this banana bread, it added richness and the perfect tender texture. Cook’s Note

I always used Janet’s Rich Banana Bread recipe to test an additional trick—using extra-ripe bananas and adding an extra one—but it resulted in the most disappointing loaf of all. But it’s not the recipe’s fault! I used my gnarliest, blackest bananas for the loaf. This seemed like a logical next step: If some banana is good, more must be better, right?

Unfortunately, the extra super-ripe fruit made the batter too heavy, resulting in a dense, squat loaf with banana pieces that sank to the bottom like little flavor anchors. Learn from my mistake: If your bananas are really ripe, you probably don’t need an extra one!
